THE BEST WAY TO COOK STEAK AT HOME

The suburban life isn’t for everyone, and most likely, if you’re reading this, the suburban life isn’t for you.  There are a range of positives and negatives for each lifestyle choice, but one of the biggest negatives about living in an apartment is the inability to grill food.  So if you’re ever hankering for a juicy steak and don’t want to visit the steakhouse, here is the best way to cook yourself a juicy one at home (in your apartment).

STEP 1 – CHILL OUT AND GRAB YOURSELF A DRINK

Take the steak out of the fridge and wait around thirty minutes or so for the steak to come to room temperature. You want the steak to come to room temperature because it ensures an even cook, this step is imperative for that medium-rare deliciousness.  So while the steak is reaching room temperature, chill out, and make yourself a negroni.

STEP 2 – SEASON WITH OLIVE OIL, SALT, AND PEPPER

Once the steak has come to room temperature, rub a bit of olive oil on all surfaces of the steak, doing this will not only allow the salt and pepper to stick onto the meat but also help your steak more easily achieve a beautiful crust.

STEP 3 – PREHEAT YOUR OVEN TO 375 FAHRENHEIT

This is where you start to cook your steak, remember, we are trying to cook a delicious steak without completely smoking out your apartment.  So, place your steak on an oven safe tray and cook at 375 for around 12-15 minutes per pound. Once the time has elapsed, you can then transfer your steak to a frying pan.     

STEP 4 – APPLY THE REVERSE SEAR METHOD

This is where you finish your steak to get it nice and flavorful (maillard reaction).  So get your frying pan ripping hot and place your cooked steak into the pan.  Once you hear the sizzle, add a few knobs of butter and garlic and rosemary if you prefer, then you can start basting your steak.  Basting basically means you take a spoon and repeatedly toss your steak around in the melted butter, doing this gets that buttery goodness into all the cracks and crevices into your steak.  After you’ve seared one side, flip your steak to the other side, continue basting, and check to see if the steak is firm to the touch, what we’re looking for here is a bit of spring to the steak.

STEP 5 – LET IT REST AND INSTAGRAM

Food is for eating not for instagramming.  But while your nicely seared steak is resting, I suppose it’s okay to instagram.  Once the steak is off a heat source, let it rest for 10-15 minutes for the juices inside to settle before you cut into it.

NOTE: The reverse sear is the best way to cook in an apartment because it achieves the delicate balance of a) cooking a great steak and b) not making your apartment smell like steak all night long. This method works wonderfully because most of the cooking is done in the oven and only the searing part is done on the frying pan, minimizing a lingering smell.
